Dehydration process
Lemons go through a multistep drying process to produce dried lemon slices that preserve much of taste and flavor of their former selves yet contain a lower amount of water, increasing their chewiness and shelf life. These are the steps:
- Visual inspection of the raw materials for any fungal spot or contamination
- Washing to remove any dirt
- Cutting to produce slices
- drying by putting in the fruit dryer for some time
- Store in an airtight container

Applications
